Outside of the usual suspects.. ie.  Prog-Metal acts and of course Sabbath with Wakeman.  What metal acts made use of the mellotron.. and which used it best in you alls opinions?  Couldn't really think of any myself.

Presto Ballet fit the bill.  They are listed as Crossover Prog on PA, but are listed here as Progressive Metal.  Their guitarist and founder is Kurt Vanderhoof from Metal Church.

For that matter, I think that Metal Church used some Mellotron as well. Here is a pretty little instrumental where they use it, although the track itself wouldn't really qualify as metal.

Here's the track with mellotron on it.  It's cool, but probably the least metal sounding track on the album.

Another song that you might get a kick out of from that Metal Church album is this cover song.

Zu - Carbon
The mellotron appears in the two minutes or so and is quite an unexpected thing here, but it works very well imo.

I know you said besides prog metal, but this band is prog black metal. But a lot of their material is sufficiently black as opposed to prog.

Lost respect for these archives when I saw Creed added, among other bands. Not going to be foruming here anymore. You can keep my reviews if you want.

Here's a brilliant track from the new Priestess album, with some juicy mellotron in the mid part.
