I love it when metal bands pull off a cover that works really well! Sure, sometimes you get a stinker but in my experience most of the time, the cover is done really well!

A lot of my personal favorites are:

'Cold Sweat' originally by Thin Lizzy, covered by Sodom, Helloween, Jorn, and The Sword
'Angel of Mercy' originally by Chastain, covered by HammerFall
'Kill the King' originally by Rainbow, covered by Stratovarius, Liege Lord, Jorn, and Metallica
'Roundabout' originally by Yes, covered by Allegaeon
'Painkiller' originally by Judas Priest, covered by Death
'White Rabbit' originally by Jefferson Airplane, covered by Sanctuary
'Godzilla' originally by Blue Oyster Cult, covered by Fu Manchu

There are probably others but I can't remember them atm. Will edit list as I remember them or others remind me.

Off the top of my head (I haven't heard the originals of some, but these are all great tracks from these artists):

Ancient Wisdom - Powerslave (Iron Maiden)
Paradox - A Light in the Black (Rainbow)
Blind Guardian - Mr. Sandman (The Chordettes)
Rebellion - The Clans Are Marching (Grave Digger, but it's ex-members of Grave Digger so...)
Iced Earth - Hallowed Be Thy Name (Iron Maiden)
Nightwish - Walking in the Air (Howard Blake)
Arjen Anthony Lucassen - Veteran of the Psychic Wars (Blue Öyster Cult)
Sanctuary - White Rabbit (Jefferson Airplane)
Cruachan and Shane Mac Gowan - Ride On (Jimmy MacCarthy) - A very different, non-metal take, was released by Arven, which is also good)
Cruachan - Some Say the Devil is Dead (Wolfe Tones)
Allegaeon - Roundabout (Yes)
Kylesa - Set Your Controls For the Heart of the Sun (Pink Floyd)
Metal Church - Highway Star (Deep Purple)

I've got shitloads of them. I collect them on Spotify and have a playlist of them. They aren't necessarily metal, but just songs I like.

Here's a few favourites:
Sundown - Nine Pound Hammer (originally by Gordon Lightfoot)

Angry Inch - Type O Negative (originally from the musical Hedwig and The Angry Inch)

Blood Makes Noise - Acid Reign (originally by Suzanne Vega - and she's in the video)

Marijuana - Brujeria (parody of Macarena by a couple of old men. Los Del Rios maybe?)

Tear It Loose - Entombed (originally by Twisted Sister)

Lowlife - Napalm Death (originally by Cryptic Slaughter)

Oh, there are so many I like! I'm always searching for Metal versions / covers of non-Metal songs. Some bands / musicians  already did some of my dreams come true, however there are many still missing.
I actually have a long list about the non-Metal songs I would like to hear in Metal version.

Also, I did a post about that in "Reddit" recently... would that be okay if I bring some of my "Reddit" posts to here?

Well, from the ones that already exist, these are some of my favourites:
* "Beat it" (Michael Jackson), cover by RAINTIME. Listening right now, as I'm writing this. It is amazing!
Many of the covers done by ATROCITY, mainly:
    * "Shout" (Tears for fears)
    * "Send me an angel" (Real Life)
* "Burnin' in the third degree" (Tahnee Cain and the Tryanglz)  by MEGATRONIX.
* "Neverending story" (Limahl), by DRAGONLAND.
* "House of rising sun" ( ? I'm not sure who is the original artist) , by EVEREVE.
TO/DIE/FOR:
    * "I just died in your arms tonight" (Cutting Crew)
    * "In the heat of the night" (Sandra)

I like the original ones (except the one I don't really know), however, it is awesome to listen to them in Metal version!  *__*

And I'd dream of a place
Where the weight of it all
Couldn't harm me
Now I know and I feel
This could never be real
On this path I walk alone."

^ The House of the Rising sun was originally done by The Animals back in the 60's. Great song!
