I would suggest you check out Atheist, my favourite of theirs being Unquestionable Presence. Cynic is another band worth checking out.

Hi Bruno, not death as such but if you like jazz influences in metal in general, Prehistoricisms by Intronaut is an absolute must. A truly wonderful composition from start to finish.

Check out Mike's review too which (if he doesn't mind me saying so) is a perfect summary. I would have reviewed it myself but he has said everything I would say only in a better way than I ever could.
