A lot of Opeth's stuff has a melancholic vibe like The Moor on Still Life or Porcelain Heart on Watershed. In fact their discography is littered with tracks that if not necessarilly melancholic for the whole song are at least in parts.

When it comes to Doom Metal a lot of bands build their whole career out of this...
Swallow the Sun, DOOM:VS, Katatonia, Anathema, Mar de Grises are some great bands that haven't been mentioned yet. The vast majority of their songs are melancholic metal (Katatonia and Anathema both have non-metal material, but it's still usually melancholic). Insomium are a melodeath band that purely do melancholic songs.
