Haven't checked out any of his movies before though I aim to do so quite soon! Not sure which I'll start w/, guess we'll see!

^ Depends what you like. 

If you enjoy horror, then Psycho is a must.

If you prefer a crime or thriller movie, then try Rope, Strangers on a Train, Rear Window or Dial M for Murder. Actually any of his ones with James Stewart in are good entry points. 

His spy movies also have a few gems, such as North by Northwest. That's actually probably his most 'fun' movie to watch and a good entry point IMO. Notorious is another good earlier spy one, along with The 39 Steps. 

He actually has quite a few romance themed movies too, like Rebecca, To Catch a Thief and Marnie, but there's always something else going on in a Hitchcock romance, sometimes quite sinister.

There are a couple of Hitchcock's I've watched twice now - ones I watched off of Prime first then found a DVD for that I needed to test - but after having dealt on all the ones I've seen for several months I find myself more and more inclined to call Strangers on a Train the best. Hitch has many movies that have really stuck with me despite many movies watched after them, but this is the one I still keep thinking about the most and will probably be the first one I return to, bar testing any DVDs I pick up for ones I've seen through Prime.

There's really no beating North By Northwest, easily my second favorite movie of all time.

39 Steps is a pretty close second though, and then maybe Dial M for Murder and Torn Curtain.
