I am a huge fan of SM, but unfortunately, most of the symphonic bands are really average.
My favorite SM band without any doubt is Epica, i also listen to After Forever, Therion, Apocalyptica, Haggard, Within Temptation (which are pretty average, i know, but i like them). I also listen to many bands that have elements of symphonic metal, but do fit better in other genres (example: Adagio is symphonic progressive power metal).

Can you suggest me a few good symphonic/neo-classical metal bands that i haven't mentioned? :D

I actually really like Tarja's latest album, one of the biggest surprises of 2010 for me.

Kamelot is much more a power metal band than symphonic though, but I still highly recommend them! 

I'd also recommend you Amberian Dawn (http://www.metalmusicarchives.com/amberian-dawn.aspx?ac=amberian), they're one of my favourites from symphonic metal.

I warmly recommend a Polish band called Gladius Noctis - their 2001 album Croaton is available for free legal download on "jamendo" (you might know the site). The music is original, they have violin and cello that build excellent atmoshpheres, no vocals (in general), but they collaborate with a soprana - great atmosphere again; fast paced rhythms alternate with slower ones. Last songs is only violin and cello - exceptional!

It's no power metal + orchestra or gothic metal influenced power with female vocals, it's a real successful musical experiment, pretty original and definitely interesting. Check it out!

A bit iffy on the symphonic front, but I'd say To-Mera are a good bet.

To-Mera are great, but I don't hear a lot of symphonic in their sound. I second the recommendation though, I've introduced them to symphonic fans before and they've gone down well.
